I don’t know about anyone else, but I feel like I am always rushing around and eating on the go. I really do attempt to be mindful of what I eat and I pay close attention to my portion size. Unfortunately, I find that I just do not have the kind of time to do a lot of cooking. So, here is a quick idea (which I have been eating constantly lately) which you can do quickly and inexpensively.
Before leaving for work, I measure out:
- 3 TBSP Cream of Wheat
- 1 C. Milk (you can use any type of milk that you like: cow, almond, coconut, soy, etc.)
- Fresh Fruit
I throw the Cream of Wheat into a re-usable container, pour the milk into a travel mug, and bag up whatever fruit I have on hand. It takes about 2 minutes to heat up the Cream of Wheat in the microwave (just add 3/4 c. of milk, heat for one minute, stir, heat an additional 45 seconds). Be sure to avoid heating anything contained in plastic in the microwave…personally I keep a glass Pyrex bowl at work for this purpose. Finally, I add the fruit and…yum! A delicious, nutritious, low-calorie meal which takes about 2 minutes to pack, 2 minutes to prepare, and costs less than $3.00!
Some good “on the go” snack options include:
- Raw Almonds
- String Cheese
- Yogurt (greek varieties pack more protein)
- Fruit/Veggies
- Hummus and Veggies
- Protein Bars
*BE PREPARED…having a snack/meal handy when hunger strikes will help you to avoid choosing a less healthy option in a moment of desperation!
